SALSA: Pineapple/Mango/Tomato/Guava/Watermelon

Salsa is famous all over the world as a Mexican sauce. The recipe is usually spicy and contains tomatoes that give it a distinct color. It is made using mortar and pestle to release some juices that add to its distinct flavor.  However, these days, there is a huge variety of Salsa available in the market as well as a lot of variations are made in homes. Mexican Salsa is traditionally served with tortilla chips, bread sticks, pitta bread, and raw vegetables or as a spread for tacos, fajitas, quesadillas, etc.  I have tried and tasted quite some of them and to my delight , they have all been very impressive. Hence, I thought of sharing the recipes with you. Here you go!

PINEAPPLE SALSA:

PINEAPPLE SALSA

Ingredients:

2 cups diced fresh pineapple
1/2 cup diced red pepper
1/4 cup chopped coriander
1/2 cup finely chopped red onion
2 tsp finely chopped green chillies
1 tsp grated ginger
Juice of 1 large lemon

1 tbsp pineapple juice

Salt, to taste

Black pepper powder to taste

Directions: Mix everything in a bowl and crush slightly using mortar and pestle just before serving.

MANGO SALSA:

Ingredients:

2 large diced mangos

1 diced tomato (deseeded)

1/2 cup diced green bell pepper

1/4 cup finely chopped red onion

1 tsp finely chopped green chillies

1/4 cup chopped coriander

Juice of 1 lemon

1 tbsp mango juice

Salt to taste

Directions: Mix everything in a bowl and crush slightly using mortar and pestle just before serving.

TOMATO SALSA:

Ingredients:

4 cups of diced tomatoes (firm, fresh and ripe)

1 jalapeno chilli, chopped finely

1/2 cup finely chopped red onions

2 small garlic cloves (minced)

1 tsp grated ginger

Juice of 1 large lemon

1 tbsp tomato juice

Salt to taste

1 tsp granulated sugar

Black pepper powder to taste

Directions: Mix everything in a bowl and crush slightly using mortar and pestle just before serving.

GUAVA SALSA:

Ingredients:

2 cups diced guavas

1/4 cup diced tomato (deseeded)

1/4 cup finely chopped spring onions

1/4 cup chopped coriander

1 tsp finely chopped green chillies

Salt to taste

1 tsp granulated sugar

Black pepper powder to taste

Juice of 1 large lemon

1 tbsp guava juice

Directions: Mix everything in a bowl and crush slightly using mortar and pestle just before serving.

WATERMELON SALSA:

WATERMELON SALSA

Ingredients:

2 cups diced watermelon (deseeded)

1 cup diced muskmelon/sun melon

1/4 cup finely chopped spring onions

1/4 cup diced green bell pepper

1 tsp finely chopped green chillies

1/8 cup chopped coriander

Salt to taste

Black pepper powder to taste

Juice of 1 large lemon

1 tbsp  watermelon juice

Directions: Mix everything in a bowl and crush slightly using mortar and pestle just before serving.

Chilli Cheese and Tomato Popcorn

Ingredients:

1 cup-Dried Corn Kernels, 2 tbsp- Oil, 2 tbsp- Cheese Powder, 1 ½ tbsp- Red Chiili Flakes, 1 tbsp- Tomato Powder, Salt to taste

Recipe:

Mix ½ cup corn and 1 tbsp oil in a microwave bowl. Cover and cook on Microwave High (100%) for 6 minutes, stirring once after 3 minutes. Add cheese powder and red chilli flakes and toss. Keep aside.

Minestrone Soup

Minestrone soup is a very healthy soup packed with good nutrition and apt for people of all age groups. Here goes the recipe.

Ingredients:

1 medium sized Carrot, 1 medium sized Zucchini, 1 medium sized Potato, 6 cloves chopped Garlic, 1 chopped Onion, ¼ cup green peas, 1 inch stalk Celery, ½ stalk Leek, 4 French Beans, 12 Fresh Basil Leaves, 3 medium sized Tomatoes, 1 ½ tbsp Vegetable Oil, 2/3 cup Tomato Puree, 2 ½ tbsp Macaroni, Salt to taste, ½ tsp White Pepper Powder, ½ cup grated Parmesan Cheese, 2 ½ cup Vegetable Stalk

Recipe:

  1. Cut carrot, zucchini and potato into half inch cubes. Cut celery, French beans and leek into half inch pieces.
  2. Blanch tomatoes, peel the skin off, cut into half and remove the seeds and cut into small pieces.
  3. Heat oil in a pan, add garlic and onion and cook for 2 minutes.
  4. Add carrot, leek and celery and cook for 4 minutes.
  5. Now add the rest of the vegetables and tomato puree. Also add half of crushed basil leaves and vegetable stalk and cook for 8 minutes.
  6. Add macaroni, salt, white pepper powder and cook for another 2 minutes.
  7. Garnish with the remaining basil leaves and grated parmesan cheese.
  8. Serve piping hot.

Bread and Butter Pudding- Fruit and Nut Flavor

Bread and Butter Pudding is an easy to make desert which can be made in several flavors like cakes and pastries. Even the basic pudding tastes great and can also be served as breakfast for kids. Today’s recipe is not only nutritious but also flavored with seasonal fruits.

Ingredients:

8-10 milk bread slices, 2 eggs, 650 ml milk, 1 tsp vanilla essence, ½ cup sugar, 1 tsp orange rind, 2 tbsp toasted and flaked almonds, 150 gm cooking chocolate, 1 tbsp slightly crushed walnuts, 1 tbsp raisins, ½ cup mango pieces, ¼ cup grated pear

Recipe:

  1. In a mixing bowl, beat eggs and sugar until sugar dissolves completely. Add milk, orange rind and vanilla essence and mix again.
  2. Apply butter on all the bread slices and keep them in a tray.
  3. Pour some of the egg and milk mixture on bread and let them soak in it for 10 minutes.
  4. In a dish greased with butter, arrange the bread slices flat in first layer, followed by some mango pieces, almonds, walnuts and raisins. Also put in some cooking chocolate pieces. Repeat this layering process for the second time again.
  5. Pour the rest of the egg and milk mixture over these layers and sprinkle a thin layer of sugar on top along with grated pear.
  6. Preheat the oven at 150 degree C and bake the dish for 10 minutes.
  7. Let the dish remain in the oven untouched for another 10 minutes even after baking is over.
  8. Serve hot or refrigerate for 2 hours to cool and serve.
