Chocolate Mud Cake for Christmas 2010

Mayans are known as the first makers of chocolate. They used to harvest cocoa beans from the rain forest in Mexico and ground it to a paste with spices to make a chocolate drink which was more of bitter chocolate liquor. Since then innumerable recipes have come into being and today chocolate recipes are a hot favorite around the world.

Chocolate Mud Cake is essentially a chocolate cake made in virtually endless variations. It is said that it originated in 1970’s or 1980’s in South America. Try out the following recipe this Christmas and bid adieu to 2010 in a warm way.

Ingredients for Chocolate Mud Cake:

Cooking Chocolate – 30 gms                                             

Instant Coffee Powder – 8.5 gms

Egg (separated) – 1

Unsalted Butter – 15 gms

Caster Sugar – 13 gms

Hazelnut Powder – 15 gms

Cinnamon Powder – 2 gms

Ingredients for Ganache or Chocolate Icing:

Fresh Cream – 50 ml

Chopped Chocolate – 50 gms


(Preparation time: 15 minutes for Prep. and 25 minutes for Baking; Serves: 8 )

Grease a 9 inch cake tin and line it with butter paper. On a double boiler, melt the cooking chocolate and whisk in coffee powder, egg yolk and butter and take care so as to avoid overheating. In a mixing bowl, beat the sugar with egg white till it forms stiff peaks and then gently fold in the chocolate, coffee, egg and butter mixture prepared earlier. Add in Hazelnut and Cinnamon powder and stir gently. Pour the batter in the cake tin and bake for 25 minutes at 180 degree C. After the baking is done, let it stand by till it cools down.

For Ganache, bring the cream to boil, add chopped chocolate and mix well. Let this cool too.

Unmold the cake and cut it into 2 halves horizontally.  Sandwich the 2 layers of cake with Ganache and later cover the entire cake with Ganache, decorate with chocolate rings or chocolate strips. Refrigerate for at least 2 hours before serving.

Fresh Take on the Recipe:

You may use almonds or cashews in place of hazelnut buth in powder and chopped form for a nice crunch. Use low fat cream to make Ganache to cut down on calories.
